Instructions
- Preheat the oven to Gas 3, 165 C, 325 F.
- Line two baking trays with parchment paper and use baking spray on both sides.
- Mix all the seeds, salt, psyllium, onion powder, and chili powder in a large bowl.
- With a stick blender or regular blender, smash up half of the mix, then put them back in the bowl and give them a good stir.
- Break up the nori sheets.
- Add to the seed mix to combine.
- Add the eggs, oil, maple syrup, and water, then mix.
- Spread the seed mixture on the parchment paper, using your hands to press it down so it’s even, flat, and fairly thin.
- Bake for 30 minutes.
- Remove the parchment paper when slightly cooled, then rotate the crackers. At this point, you can break or cut the crackers if you wish.
- Put them back in the oven for 15 minutes.
- Switch the oven off. Leave in the oven for a further 1/2 hour before removing.
- Serve and enjoy alone or with your favorite topping!
Notes
- Greasing both sides of the parchment paper is crucial for this recipe. Measure how much paper you need for each tray, then cut to size and grease both sides.
- We highly recommend using coconut oil for a better and tastier cracker.
- The reason for greasing both sides is that the paper lays flat on the tray. You will only need a little oil for this part. The oil on the top part also stops the crackers from sticking to the parchment paper and makes them crispier.
- Smashing up at least half of the dry mix is optional, but it helps bind the seeds and makes for a better recipe. It is optional but worth the effort.
- Always use greased parchment paper for the crackers; this will help them not to stick to the trays.
