The good news is this delicious Colcannon recipe is vegetarian, nut-free, gluten-free, and egg-free. With some substitutions, it can also be vegan and dairy-free.
This delicious mashed potato combined with kale is a classic Irish side dish that everyone loves. It’s usually served alongside other traditional dishes such as stews, casseroles, and bacon and eggs as a breakfast meal. Colcannon holds a special place in the hearts of many as a nostalgic and comforting meal or side.
We particularly love eating it alongside our Chocolate Lamb Stew and Guinness Beef Stew because it’s great at mopping up the gravy.
Our huskies are also kindred spirits when it comes to loving mashed potatoes. They take their role as chief taste testers very seriously when it comes to leftoversโminus the spring onions, of course!
Colcannon has become a beloved comfort food enjoyed throughout the fall (autumn) and winter months in our house, probably because most potatoes are harvested at the end of the summer. Kale and the optional spring onions are usually available throughout the year.

Colcannon Origin
Colcannon is a traditional Irish dish with centuries-old roots. Its exact origin is somewhat unclear, but it is deeply ingrained in Irish culinary history and culture. It was originally associated with Halloween festivities and the celebration of the summer harvest.
The name “colcannon” is derived from the Gaelic term “cรกl ceannann,” which translates to “white-headed cabbage.” This name reflects the dish’s primary ingredients: mashed potato and either cabbage or kale.
Let’s Talk Ingredients
We feel every ingredient adds to the overall taste and texture; if you remove one, it’s like you’ve removed them all.
- Potatoes โ russet potatoes are best for mashed potatoes.
- Kale โ black kale has the best taste, but your favorite can be used.
- Butter โ use unsalted if your seasoning with salt.
- Milk โ use full-fat for optimal creaminess.
- Spring Onions โ or scallions
- Salt and Pepper โ used for seasoning, the salt brings out the sweetness of the vegetable.
For more detailed ingredients, see the recipe card.
Customizations
Here are some foodie alternatives should you want to make some changes:
- Potatoes โ alternatives for mashing are Maris Piper, King Edwards, Rooster, Yukon Golds, or Desirรฉe. The best of all are Russet and Yukon Golds.
- Kale โ while traditional Colcannon uses cabbage or kale, you can experiment with other greens like spinach or Swiss chard for different flavors and textures.
- Butter โ use a dairy-free version.
- Milk โ use creamy dairy-free alternatives such as soy milk, cashew milk, or coconut cream from the can.
- Spring Onions โ use scallions instead.
When substituting ingredients, remember that the taste, texture, and overall result might differ, particularly if you’re substituting many ingredients.
If you have made the Colcannon with any customizations, we’d love to hear about it; please message us in the comments.
Instructions – Overview
Colcannon is easy to make and is even easier to eat. Here’s a breakdown of how to get started on your baking journey (more detailed instructions are in the recipe card):

โถ๏ธ Boil the chopped potatoes until tender. In a separate pan of boiling water, wilt the kale for a couple of minutes. Drain both vegetables. Mash the potatoes with a masher or a potato ricer until smooth, and chop the kale.
โถ๏ธ Add the butter and place the lid on the pan to allow the butter to melt while heating the milk in a pan or microwave. Gradually add the warm milk, stirring constantly, until you achieve your desired consistency. You may not need to use all of the milk, so add it gradually.
โถ๏ธ Add blanched kale, and chopped spring onions if using, and season with salt and pepper to taste. Combine well before serving.

Pairing
Colcannon is frequently eaten on its own, but it can be paired. Here are some suggestions and our favorite go-to’s for what to eat with it:

โถ๏ธ The beauty of this meal is that it can be eaten alongside a hearty stew or enjoyed on its own as a comforting meal. We particularly love eating it alongside our Chocolate Lamb Stew and Guinness Beef Stew; it’s definitely the rich flavorful gravy that these two dishes produce during cooking.
Try our Spanish Sausage Stew and Chicken Chorizo Feijoada both are amazing with Colcannon.
โถ๏ธ Colcannon makes an excellent side dish for grilled or roasted meats such as chicken, pork, or lamb. The creamy mashed potato provides a delicious contrast to the savory, caramelized flavors of the meat.
โถ๏ธ Mash potato and onion gravy is a traditional Irish (and British) dish that also features sausages. This combination is heavenly for both the British and Irish people.
โถ๏ธ Colcannon pairs beautifully with corned beef and cabbage, another beloved Irish dish. The creamy potatoes and tender greens complement the salty, savory flavor of the corned beef, creating a delicious and satisfying meal.
โถ๏ธ Colcannon can also be served as a main course alongside vegetarian dishes such as roasted vegetables, vegetable stews, and pies.
โถ๏ธ Get creative with add-ins like chopped spring onions, garlic, chives, or even crispy bacon for extra flavor and texture.
โถ๏ธ Turn leftovers into tasty patties by shaping them into cakes and frying until golden brown. They make a delicious side dish or even a light meal served with a salad.

Colcannon – (Irish Mash Potato)
Equipment
- Scissors - or knife
Ingredients
- 1 kg Russet Potatoes
- 200 grams Kale - black kale has the best taste
- 100 grams Butter - or dairy-free
- 100 ml Full Fat Milk - or a creamy favorite
- 50 grams Spring Onions - or scallions
- Salt and Pepper to taste
Instructions
- Peel and cut potatoes into chunks. Boil them in a large pot of salted water until they are tender, about 15-20 minutes.
- Wash and finely shred the kale. In a separate pot, add to boiling water for about 3-5 minutes, until wilted. Drain well.
- Drain the cooked potatoes and return them to the pot. Mash them with a potato masher or fork until smooth.
- Add the butter to the potatoes and place the lid on the pan to allow the butter to melt while heating the milk.
- In a small saucepan or microwave, heat the milk over low heat until warmed, but not hot.
- Gradually add the warm milk to the mash potato, stirring constantly, until you achieve your desired consistency. You may not need to use all of the milk, so add it gradually.
- Add blanched kale and add chopped spring onions, if using.
- Season with salt and pepper to taste.
- Combine well. Serve and enjoy!
Notes
- For the creamiest mashed potatoes, use starchy potatoes like Russets or Yukon Golds. These varieties mash well and absorb flavors nicely.
- Be careful not to overcook the potatoes, as they can become waterlogged and lose their texture. Cook them until they are tender but still hold their shape.
- Cut the potatoes into equal sizes, about two inches, to ensure they cook evenly.
- Potatoes can be bland if not properly seasoned, so don’t skimp on the salt and pepper. Taste as you go, but adjust as needed, especially towards the end.
- After blanching the greens, drain them well to remove excess moisture. This will prevent the mashed potatoes from becoming watery.
- Allow to cool for 5 minutes before serving.
