The good news is this delicious Creamy Biscoff Mousse recipe is vegetarian, nut-free, and egg-free, and with some substitutions, it can also be gluten-free and dairy-free.
Whether you’re entertaining guests or simply treating yourself, this delicious mousse is definitely the one to grab for ease, quickness, and superior taste. It’s the easiest show-stopping dessert with only a handful of ingredients. It elevates any occasion with its irresistible charm and sumptuous flavor profile.
Its most intriguing bonus is that it’s a no-bake recipe, and no eggs are needed. Although we suggest a two-hour setting time, we realize this isn’t always easy. It’s so hard to refrain from refrigerating, especially when little kiddies are at your feet begging you for a helping. So, go ahead—we endorse the total temptation and giving in!
The other bonus is that this dessert is perfect to make during the summer months without having to sweat yourself out in the kitchen!

Let’s Talk Ingredients
We feel every ingredient adds to the overall taste and texture; if you remove one, it’s like you’ve removed them all.
- Biscoff Cookies — These spiced cookies, originating from Belgium and occasionally referred to as speculoos, have a unique taste of caramel and cinnamon. They are thin, crumbly, and crispy and are a combination of biscuit and coffee. Lotus Biscoffs are widely available in supermarkets worldwide and are used in this recipe by smashing them and piling them on top of the bake.
- Biscoff Spread — the texture of this smooth spread is similar to that of a chocolate or peanut butter spread. Its main flavor profile is caramel and spices. The Biscoff Spread is made with only natural ingredients and is vegan-friendly.
- Cream — store-bought double cream (heavy cream).
- Vanilla Extract — use Nielsen Massey, which is made with real vanilla beans and alcohol. The vanilla is quite potent and adds a beautiful richness to desserts.
- Powdered Sugar — also called icing sugar in some countries.
For more detailed ingredients, see the recipe card.
Customizations
Here are some foodie alternatives should you want to make some changes:
- Biscoff Spread — substitute with your favorite biscuit spread. Great substitutes are Nutella spread or peanut butter.
- Cookies — Gingersnaps, buttery shortbread cookies, Graham crackers, digestives, and Oreos are all delicious alternatives; you can also use a gluten-free option.
- Cream — use coconut cream or other thick vegan cream for a dairy-free alternative.
- Vanilla Extract — use a non-alcohol base vanilla flavoring.
When substituting ingredients, remember that the taste, texture, and overall result might differ, particularly if you’re substituting many ingredients.

Instructions – Overview
Creamy Biscoff Mousse is easy to make and is even easier to eat. Here’s a breakdown of how to get started on your baking journey (more detailed instructions are in the recipe card):
▶︎ This luscious dessert begins with crushed Biscoff cookies. Then, in a large bowl, whip the cream until stiff peaks form. In another bowl, mix the Biscoff spread, powdered sugar, and vanilla extract until smooth and well combined. Gently fold the whipped cream into the Biscoff mixture until fully combined, being careful not to deflate the cream too much.
▶︎ Soften the Biscoff spread reserved for the decoration. Then, in serving glasses or bowls, layer the crushed Biscoff cookies, and Biscoff spread at the bottom.
▶︎ Spoon or pipe the Biscoff mousse over the crushed cookies, filling each glass about halfway and drizzling more Biscoff spread around the cream.
▶︎ Place the glasses in the refrigerator and chill for at least 2 hours, or until the mousse has set. Serve with additional Biscoff cookies reserved for decor.

Here are some of our suggestions to get you started:
- Hand Mixer or kMix — to combine the ingredients together.
- Mini Chopper — to crush the cookies.
- Mixing Bowl — if you’re using a hand mixer, you will need a bowl to combine the ingredients.

We use this Hamilton Beach Hand Mixer for baking because it’s incredibly smooth, doesn’t flick ingredients, has seven digital speeds, is quiet and quick, and has beaters with protective covers to stop your bowls from being scratched; as such, they lower the noise level. It also has kneaders, a single whisk attachment, and storage.

Creamy Biscoff Mousse is frequently eaten as a standalone dessert, but it can be paired. Here are some suggestions and our favorite go-to’s for what to eat with it:
▶︎ The rich, caramelized flavors of Biscoff beautifully complement a mug of creamy hot chocolate, a cup of tea, or coffee.
▶︎ Balance the richness of the Biscoff mousse with the natural sweetness of fresh berries such as strawberries, raspberries, or blueberries.
▶︎ To create the ultimate dessert, top the mousse with a scoop of creamy egg-free Vanilla Ice Cream or a drizzle of pouring cream.
▶︎ Don’t know what to have for dinner with it? A delicious vegetarian meal such as this Shakshuka With Feta or a light No-Fuss Shepherd’s Pie would pair beautifully.

Equipment
- Hand Mixer - or kMix
Ingredients
- 250g grams Biscoff Cookies
- 400 grams Double Cream - heavy cream
- 200 grams Biscoff spread
- 50 grams Powdered Sugar
- 1 tsp Vanilla Extract
Decoration:
- 50 grams Biscoff Cookies - about 6
- 100 grams Biscoff Spread
Instructions
- Crush the Biscoff cookies. Place them in a ziplock bag and crush using a rolling pin or alternatively use a mini chopper.
- In a large bowl, whip the cream until stiff peaks form.
- In another bowl, mix together the Biscoff spread, powdered sugar, and vanilla extract until smooth and well combined.
- Gently fold the whipped cream into the Biscoff mixture until fully combined. Be careful not to deflate the cream too much.
- Soften the Biscoff spread reserved for the decoration by microwaving it for 10-20 seconds on high.
- In serving glasses or bowls, layer crushed Biscoff cookies and Biscoff spread at the bottom.
- Spoon or pipe the Biscoff mousse over the crushed cookies, filling each glass about halfway and drizzling more Biscoff spread around the cream.
- Place the glasses in the refrigerator and chill for at least 2 hours, or until the mousse has set.
- Before serving, decorate with additional Biscoff cookies if desired. We estimated one cookie per serving, but more can be added.
Notes
- For the creamiest texture, opt for full-fat heavy cream. This will ensure a rich and indulgent mousse. Do not use lite versions.
- Be careful not to overwhip the cream, but make sure it reaches stiff peaks. This ensures that the mousse has a light and airy texture.
- When combining the whipped cream with the Biscoff mixture, fold gently using a spatula. This helps maintain the airy texture of the mousse and prevent deflating.
- Taste the Biscoff mixture before adding powdered sugar, and adjust the amount according to your tastebuds.
- Try to allow the mousse to chill in the refrigerator for at least 2 hours, or until set. We totally understand it if you can’t!
- Biscoff Spread: Substitute with your favorite biscuit spread. Great substitutes are Nutella spread or peanut butter.
- Cookies: Gingersnaps, buttery shortbread cookies, Graham crackers, digestives, and Oreos are all delicious alternatives; you can also use a gluten-free option.
- Cream: Substitute with coconut cream or other thick vegan cream for a dairy-free alternative.
