Let’s Talk Ingredients
We feel every ingredient adds to the overall taste and texture; if you remove one, it’s like you’ve removed them all.
- Sausages — it’s better to buy good-quality sausages than prepackaged sausage meat. Prepackaged sausage meat can be of lower quality than a pack of sausages.
- Onion — use red onion for sweetness.
- Garlic — draws out the flavors in the casserole.
- Mushrooms — preferably use chestnut mushrooms as they have a lovely flavor.
- Tomatoes — use canned plum tomatoes as they add a rich flavor.
- Stock — use good quality chicken stock.
- Mustard — use English or French mustard to add a little yellow color and a slightly fiery taste.
- Oil — use something like rice bran oil because it can withstand high temperatures.
- Spices — we use smoked paprika, thyme, rosemary, oregano, bay leaves, and seasoning to taste.
For more detailed ingredients, see the recipe card.
Customizations
Here are some foodie alternatives should you want to make some changes:
- Sausages — You can use any type of sausage you prefer, such as pork, beef, chicken, or even vegetarian sausages.
- Onions — use white onions.
- Garlic — use garlic puree (paste) for convenience.
- Stock — use vegetable stock.
- Mustard — use Dijon, but it won’t add the little hot kick.
When substituting ingredients, it’s essential to remember that the taste, texture, and overall result might differ, particularly if you’re substituting many ingredients.

Instructions – Overview
Sausage Casserole is super easy to make; the tedious part is watching it cook. Here’s a breakdown of how to get started (more detailed instructions are in the recipe card):
▶︎ Begin by heating oil in a large, heavy-bottomed pot over medium heat. Brown the sausages on all sides, then remove them and set aside. In the same pot, sauté the sliced onions and minced garlic until translucent.
▶︎ Add the paprika, thyme, rosemary, and oregano, letting the flavors blend for 2 minutes. Return the sausages to the pot and add canned chopped tomatoes, stock, and bay leaves. Season with salt and pepper, then bring the mixture to a boil.
NOTE: If you want to add carrots and potatoes to the casserole, then chop into bite-size peices and add them now.
▶︎ Reduce the heat to low, cover, and let it simmer for 30-40 minutes until the flavors have melded together, stirring occasionally to prevent sticking.
NOTE: If the sauce is too thin, simmer uncovered for a few minutes to thicken.
▶︎ Remove the bay leaf before serving and adjust seasoning as needed. Garnish with chopped fresh parsley for a burst of color and freshness. Serve this hearty casserole with crusty bread or a simple green salad for a complete, comforting meal.

Pairing
Sausage Casserole is frequently eaten as a standalone one-pot main meal, but can also easily be paired with other delicious foods. Here are some suggestions and our favorite go-tos for what to eat with it:
▶︎ Sausage casserole is often served with crusty bread to soak up the flavorful broth. Whether it’s a baguette, ciabatta, or Homemade Bread Loaf. Bread always complements the dish beautifully.
▶︎ We often incorporate a mix of vegetables for texture and flavor. Root vegetables like carrots, potatoes, and parsnips hold up well. The gravy/sauce adds a lot of flavor to them when added just before simmering.
▶︎ Lightly steamed green beans provide a fresh, crisp contrast to the rich casserole. A squeeze of lemon juice and a sprinkle of sea salt enhance their natural flavor.
▶︎ Cheeses like Manchego or Idiazabal can also be served alongside the casserole.
▶︎ Serve a mixed green salad with a light vinaigrette dressing to add some freshness to the meal. The salad’s crispness can provide a nice contrast to the casserole’s richness.
▶︎ For a British culinary experience, try Colcannon Mashed Potato, which everyone knows as Bangers and Mash. It adds an extra layer of comfort to the meal. The smooth texture and buttery flavor are a great match for this hearty casserole.
▶︎ For afters, a fruity cake such as this Marzipan Cherry Cake or a lemony-type cake such as this Boozy Lemon Cake will provide a sweet finish to this hearty meal.
