- Sausages — buy good-quality sausages rather than prepackaged sausage meat. Prepacked sausage meat can be of less quality than a pack of sausages. There are more options to choose from with packed sausages, such as being outdoor-bred and gluten-free.
- Mince — use beef steak mince, as other varieties can be low quality. If you can grab Angus all the better.
- Onion — use red onion for sweetness.
- Bacon — use back bacon, streaky bacon, and smoked or non-smoked bacon. We find using streaky bacon easier to lay across the meatloaf.
- Eggs — use medium to large eggs at room temperature before boiling.
- Garlic Cloves — provide a subtle garlic flavor.
- Worcestershire Sauce — use a quality brand such as Lea & Perrins.
- Sauce — use Reggae Reggae Sauce produces a rich-umami taste.
- Spices / Herbs use thyme, cumin, and smoked paprika. The paprika gives the meatloaf an aromatic taste and a deep red color.
- Salt — use Himalayan salt; it brings out the flavor.

Reggae meatloaf is simple to make; the hardest part is waiting to finish cooking. Here’s a breakdown of how to get started on your journey (more detailed instructions are in the recipe card):

▶︎ Preheat oven to 375°F, 190°C, Gas 5, then boil some water in a saucepan, then add the eggs. Boil for 10 minutes, then drain. Immediately add cold water. Drain after 5–10 minutes, then add more cold water to cool right down. Drain the water again after 5-10 minutes, then pop it in the fridge. (This method prevents graying around the egg.)
▶︎ In the food processor, blitz the onion and garlic finely. Remove the skin from the sausages and add them to the food processor. Add the steak mince, reggae sauce, Worcestershire sauce, paprika, and salt to the food processor. Blitz using the pulse button until all is fully combined. Remove half of the raw meatloaf mix and place it on a pizza tray. Make sure the tray is on a flat surface. Form an oval shape about 2 inches thick.
▶︎ Remove the eggs from the fridge and shell them. Rinse under cold water to remove any loose shells. Place the eggs side by side on the raw meat. Don’t worry if you don’t use all the eggs; they can be used in a salad or sandwiches.
▶︎ Now, take the rest of the raw meatloaf, pat gently into the eggs, and shape it into a look-a-like loaf of bread. Top with bacon, leaving as few gaps as possible. Next, pace the pizza tray on the roasting pan; this will catch excess oil. Place in the oven and cook for 60-90 minutes. Check your meatloaf halfway through cooking; if the bacon burns, cover lightly with foil.

Instructions

- Boil some water in a saucepan, then add the eggs to the boiling water. Boil for 10 minutes, then drain. Immediately add cold water. Drain after 5–10 minutes, then add more cold water to cool right down. This method prevents graying around the egg. Pop it in the fridge.
- In the food processor, blitz the onion and garlic finely.

Notes
- The reggae meatloaf calls for making it flattened and somewhat elongated, much like a loaf of bread. After adding hard-boiled eggs, the meatloaf is topped with more meat mix and decorated with bacon.
- The meatloaf must be placed on top of a pizza-like tray with holes to allow excess fat to drain into a roasting pan. This cooking method ensures a healthier meal.
- Reggae Reggae Sauce by Levi Roots adds a Caribbean twist, but any brown sauce can be used. Let us know your favorites in the comments below.
