Let’s Talk Ingredients
A chicken, bacon, and mushroom bake can be a delicious and comforting dish. We feel every ingredient adds to the overall taste and texture; if you remove one, it’s like you’ve removed them all.
- Chicken — use chicken breasts for best results.
- Bacon — use smoked thick-cut bacon.
- Cornflakes — use unsweetened.
- Mushrooms — fresh chestnut mushrooms are best.
- Cheese — topping with a layer of grated cheese adds richness. Cheddar, mozzarella, or parmesan work well.
- Cream — we use double cream.
- Canned Soup — we use Campbell condensed chicken soup and condensed mushroom soup; the combination brings a perfect balance to the meaning of this bake, and they’re quick and easy to add.
- Butter — we use dairy butter to saute the mushrooms.
- Spices — we use smoked paprika and chives.
For more detailed ingredients, see the recipe card.
Customizations
Here are some foodie alternatives should you want to make some changes:
- Chicken — great alternatives are chicken thighs without the bone or turkey breast.
- Cheese — there are many dairy-free cheese alternatives that can be used.
- Cream — for a dairy-free option, substitute with a dairy-free version. Soy cream, coconut cream, and oat cream are great options.
When substituting ingredients, it’s essential to remember that the taste, texture, and overall result might differ, particularly if you’re substituting many ingredients.

Instructions – Overview
Chicken bacon bake is easy to make and is even easier to eat. Here’s a breakdown of how to get started on your baking journey (more detailed instructions are in the recipe card):
▶︎ Chicken bacon bake is delightful to prepare because it’s so easy to throw together. Begin by preheating your oven to 180℃, 356℉, Gas 4, then mix the canned soups, cream, paprika, and pepper in a bowl using a whisk or spatula.
▶︎ Remove and discard any sinews from the chicken, cut it into chunks, wash until the water runs clear, and then add to the baking dish. Remove and discard the bacon fat, then cut each bacon slice into two pieces and add them to the dish.
▶︎ Chop and saute the mushrooms in butter for 3–4 minutes, then add them to the baking dish. If you’re using frozen sliced mushrooms, open the packet and add them straight to the chicken. Pour the sauce over the meat and mushrooms, then mix.
▶︎ Crumble the cornflakes a little, sprinkle over the top, then sprinkle over some grated cheese and chives. Then, pop the Chicken Bake in the oven for 45–50 minutes.

Equipment
- Hand Mixer - or mini whisk
Ingredients
- 600 grams Chicken Breast
- 250 grams Bacon
- 400 grams Chestnut Mushrooms
- 300 grams Double Cream
- 50 grams Grated Cheese
- 1 can Condensed Mushroom Soup
- 1 can Condensed Chicken Soup
- 40 grams Cornflakes
- ½ tsp Smoked Paprika
- 2 tsp Dried Chives
- Pinch Black Pepper
- 2 tbsp Butter
Instructions
- Preheat your oven to 180℃, 356℉, Gas 4.
- Mix the canned soups, cream, paprika, and pepper in a bowl using a whisk or spatula.
- Cut the chicken into about 8 pieces, then remove and discard any sinews.
- Wash the chicken until the water runs clear.
- Add the chicken to the baking dish.
- Remove and discard the bacon fat.
- Cut each bacon slice into two pieces, then add them to the dish.
- Saute the mushrooms in butter for 3–4 minutes, then add them to the baking dish.
- Alternatively, you can use canned mushrooms for quickness. Open them, drain the water, then add the mushrooms to the dish.
- Poor the sauce over the meat and mushrooms, then mix them.
- Crumble the cornflakes, then sprinkle on top.
- Sprinkle the grated cheese over the cornflakes. (Your favorite mix of cheeses can be used instead of just one type.)
- Sprinkle the chives on top of the cheese.
- Time to bake! Pop the chicken dinner in the oven for 45–50 minutes.
- Remove the dish from the oven. Serve with garlic bread and green vegetables.
Notes
- For the best results, use fresh, high-quality chicken, bacon, and mushrooms. Fresh ingredients impart better flavors and textures to your dish.
- The cornflakes and cheese are equal parts; however, the goal is to cover the entire dish, so feel free to add more or less if needed. We suggest using unsweetened cornflakes, but if you can’t locate them, then sweetened ones will suffice.
- Use regular soup if you can’t locate condensed soup in your country.
- If you can only source one flavor, use two of that particular flavor.
- Bacon medallions or lean bacon that have had the fat removed is best.
- Fresh mushrooms are best used in chicken bacon bake; they must be sauteed before adding. However, you can use canned mushrooms if you’re pressed for time. Avoid using frozen mushrooms because they produce too much water.
- Cooking times may vary depending on your oven and the size of your ingredients, so it’s always a good idea to monitor the dish as it bakes.
- Before serving, let it rest for 5 minutes for the best flavor and texture.
- Chicken: Great alternatives are chicken thighs without the bone and turkey breast.
- Cheese and Cream: Substitute with dairy-free.
Feel free to swap any ingredient listed with whatever you have lying around. It will probably taste just as amazing! Please let us know how it was…we can’t wait to hear all about it!
