Let’s Talk Ingredients
We feel every ingredient adds to the overall taste and texture; if you remove one, it’s like you’ve removed them all.
- Peas โ use dried marrowfat peas they produce a creamy texture and a slightly sweet, nutty taste.
- Apples โ apples add a pleasant sweetness and a touch of tartness to the soup. They also provide a subtle fruity aroma that can complement the earthiness of the peas.
- Carrots โ carrots bring a natural sweetness and a hint of earthiness to the soup. They can also enhance the soupโs texture and color, making it more visually appealing.
- Celery โ celery provides a mild, slightly peppery flavor with a hint of bitterness. It adds depth and a refreshing quality to the soup.
- Onions โ onions add a savory and aromatic component to the soup. When sautรฉed before blending, they contribute a rich and slightly sweet undertone.
- Stock โ use one liter of good quality vegetable stock or chicken stock.
- Salt โ use himalayan salt; it brings out the flavor and offsets the sweetness.

Customizations
Here are some foodie alternatives should you want to make some changes:
- Peas โ the type of peas you use can make a big difference in the consistency, color, and taste. Dried peas enhance the flavor and vegan meatiness, while frozen or canned peas produce a blander taste and a watery soup. Dried marrowfat peas can be difficult to get hold of in the store; if you canโt find them online in your country, substitute them with green split peas.
- Stock โ slow cooking always produces excess water, so if you want a thinner soup, check its thickness at the end and add more stock as needed.
- Parsley โ fresh chopped parsley can be added as an optional extra.
Looking for something slightly different? Although this recipe doesn’t include meat, it can be added. A good choice is cooked ham hock or pancetta. When the soup is fully cooked and blended, sprinkle the meat over the top just before serving.
When substituting ingredients, it’s essential to remember that the taste, texture, and overall result might differ, particularly if you’re substituting many ingredients.

โถ๏ธ Consider a cheese platter with a variety of cheeses, such as mild goat cheese, brie, or cheddar. The creamy and slightly tangy nature of these cheeses can contrast nicely with the sweetness of the apple and the earthiness of the peas in the soup.
โถ๏ธ A dollop of sour cream can also enhance the taste of the soup.
โถ๏ธ Nori Seed Crackers and Croutons can add a delightful crunch to any soup. To make the croutons, toast cubed bread with a drizzle of olive oil and your choice of seasonings, such as garlic or parsley.
โถ๏ธ Adding fresh parsley or basil can elevate the soup’s complexity and aroma, giving it a final touch.
โถ๏ธ If you eat meat, crispy bacon bits, pancetta, or diced hock ham can be sprinkled over the soup just before serving. The meat’s savory and salty notes complement the soup’s sweet and earthy flavors.
โถ๏ธ Let’s not forget a glass of wine! A chilled, crisp white wine like Sauvignon Blanc or Chardonnay pairs well with the pea soup. The wine’s acidity and fruitiness can complement the apple and vegetable flavors.
