How about treating your guests to a delicious creamy Chicken Bacon Bake, complete with chestnut mushrooms and a delightfully creamy sauce? Although it's an old-fashioned dish, it never fails to impress, and your guests are sure to love it.

Ingredients
  

  • 600 grams Chicken Breast
  • 250 grams Bacon
  • 400 grams Chestnut Mushrooms
  • 300 grams Double Cream
  • 50 grams Grated Cheese
  • 1 can Condensed Mushroom Soup
  • 1 can Condensed Chicken Soup
  • 40 grams Cornflakes
  • ½ tsp Smoked Paprika
  • 2 tsp Dried Chives
  • Pinch Black Pepper
  • 2 tbsp Butter

Equipment

  • 23cm Square Dish
  • Frying Pan
  • Mixing Bowl

Method
 

  1. Preheat your oven to 180℃, 356℉, Gas 4.
  2. Mix the canned soups, cream, paprika, and pepper in a bowl using a whisk or spatula.
    300 grams Double Cream, 1 can Condensed Mushroom Soup, 1 can Condensed Chicken Soup, ½ tsp Smoked Paprika, Pinch Black Pepper
  3. Cut the chicken into about 8 pieces, then remove and discard any sinews.
    600 grams Chicken Breast
  4. Wash the chicken until the water runs clear.
  5. Add the chicken to the baking dish.
  6. Remove and discard the bacon fat.
    250 grams Bacon
  7. Cut each bacon slice into two pieces, then add them to the dish.
  8. Saute the mushrooms in butter for 3–4 minutes, then add them to the baking dish.
    400 grams Chestnut Mushrooms, 2 tbsp Butter
  9. Alternatively, you can use canned mushrooms for quickness. Open them, drain the water, then add the mushrooms to the dish.
  10. Poor the sauce over the meat and mushrooms, then mix them.
  11. Crumble the cornflakes, then sprinkle on top.
    40 grams Cornflakes
  12. Sprinkle the grated cheese over the cornflakes. (Your favorite mix of cheeses can be used instead of just one type.)
    50 grams Grated Cheese
  13. Sprinkle the chives on top of the cheese.
    2 tsp Dried Chives
  14. Time to bake! Pop the chicken dinner in the oven for 45–50 minutes.
  15. Remove the dish from the oven. Serve with garlic bread and green vegetables.

Here are some top tips to help you succeed in making a Chicken Bacon Bake like a pro:
  1. For the best results, use fresh, high-quality chicken, bacon, and mushrooms. Fresh ingredients impart better flavors and textures to your dish.
  2. The cornflakes and cheese are equal parts; however, the goal is to cover the entire dish, so feel free to add more or less if needed. We suggest using unsweetened cornflakes, but if you can't locate them, then sweetened ones will suffice.
  3. Use regular soup if you can't locate condensed soup in your country.
  4. If you can only source one flavor, use two of that particular flavor.
  5. Bacon medallions or lean bacon that have had the fat removed is best.
  6. Fresh mushrooms are best used in chicken bacon bake; they must be sauteed before adding. However, you can use canned mushrooms if you're pressed for time. Avoid using frozen mushrooms because they produce too much water.
  7. Cooking times may vary depending on your oven and the size of your ingredients, so it's always a good idea to monitor the dish as it bakes.
  8. Before serving, let it rest for 5 minutes for the best flavor and texture.
