Water Kefir Origin
Water kefir grains are thought to have originated in Mexico, where they allegedly first formed as crystals on cactus plant paddles. Bacteria and yeast produce polysaccharides that make up the grains, which are then broken down by sucrose (table sugar) in the water.
The grains contain a symbiotic culture of bacteria and yeast (SCOBY). During fermentation, they consume sugar and produce carbon dioxide, as well as other beneficial compounds. The result is a delicious and naturally fizzy drink that is a great alternative to soda and soft drinks. It is especially good when flavored with lemon.

- Water Kefir Grains — use organic water kefir grains; they are small, translucent, and gelatinous clusters.
- Sugar — cane sugar should be used and a pinch of rapadura sugar to encourage the fermentation.
- Water — for best fermentation, use mineral water.

Sugar Substitutions
The only ingredient you might want to consider changing is the sugar. You might think the sugar quantity is a lot, and you’re right; it does appear to be a lot. So, people ask if it’s okay to use xylitol or erythritol as a substitute.
Here’s our answer:
Xylitol and erythritol are sugar alcohols commonly used as substitutes in various foods and beverages, but they are not recommended for making water kefir. Water kefir is traditionally made using natural sugars, typically in the form of cane sugar, brown sugar, or fruit sugars, as these sugars provide the necessary nutrients for the kefir grains to ferment and thrive.
Xylitol and erythritol do not provide the same nutrients that kefir grains require for fermentation. Kefir grains are composed of bacteria and yeast cultures, and they rely on sugars to metabolize and produce the characteristic fizzy, fermented beverage. Using xylitol and erythritol will not support the growth and activity of the kefir grains, potentially leading to issues with the fermentation process.
If that amount of cane sugar bothers you, consider using honey or maple syrup. However, it’s essential to remember that altering the sugar source may affect your water kefir’s taste and fermentation process. Always monitor your water kefir closely when experimenting with different sweeteners to ensure it’s fermenting properly and producing a safe and delicious beverage.
Instructions – Overview
Kefir is inexpensive and contains billions of beneficial bacteria. Considering the little effort needed, it’s worth making your own at home. Here’s how to get started (more detailed instructions are in the recipe card):
▶︎ Combine warm luke water and sugar in the jar to make water kefir. Stir until completely dissolved, then add the water kefir grains. Leave to ferment for 24 to 48 hours. Usually, 24 hours is sufficient. When ready, sieve out the grains and put the fermented water into another jar. Place in the fridge and drink when cool. Repeat the process for more water kefir, we always have two jars going.
NOTE: During fermentation, the bacteria and yeast in the grains consume the sugar and produce carbon dioxide and a range of beneficial compounds.

Does Water Kefir Contain Alcohol?
The fermentation process converts the sugars into compounds, including carbon dioxide, organic acids, and small amounts of alcohol.
While water kefir typically contains minimal alcohol, the alcohol content is generally very low—usually less than 0.5% ABV (alcohol by volume). This is considered negligible and is comparable to the alcohol content in many non-alcoholic beverages.
The alcohol content in water kefir can vary depending on factors such as fermentation time, temperature, and the specific strains of bacteria and yeast present in the kefir grains. If the fermentation process is prolonged or conditions are favorable for higher alcohol production, the alcohol content may slightly increase. How Healthy Is Water Kefir?
As we mentioned, water kefir is a fermented beverage made by mixing sugar, water, and kefir grains, which contain bacteria and yeast. Like other fermented foods, it is also suggested that water kefir may also provide some health advantages. The testimonials certainly suggest that it may be true!
Nevertheless, it’s essential to note that there is not much scientific research on the effects of water kefir. Most of the available evidence pertains to milk kefir, which has a different composition and is more potent. Don’t get too excited about the potency; milk kefir has an acquired taste—it’s very sour, to say the least.

Tibicos Water Kefir
Equipment
- Fermenting Jars (x2)
- Brita or other water purifier
Method
- Add the sugar to the water and stir until it is completely dissolved.1 liter Water, 50 grams White Cane Sugar
- Pour the water kefir grains into the jar or container.40 grams Water Kefir Grains
- Pour the sweetened water over the kefir grains in the jar. Open the air vent on the jar lid, then place the lid on the jar.
- Let the mixture ferment at room temperature, away from direct sunlight, for about 24 to 48 hours. The fermentation time may vary depending on the temperature and the strength of the grains. The longer you ferment, the less sweet and more acidic the kefir will become.
- After the first fermentation, you can strain out the kefir grains and transfer the liquid to a separate container. If desired, you can add additional flavorings such as pieces of fruit, herbs, or spices to the strained liquid. Seal the container with the lid and leave it at room temperature for another 24 to 48 hours. This will allow the kefir to carbonate and develop more flavor. Keep in mind that the carbonation process produces gas, so periodically “burp” the container to release the pressure is 100% necessary if you're not using a valve lid.Fruits
- After the second fermentation, strain the water kefir to remove any flavorings or sediment. You can use a fine-mesh strainer or cheesecloth for this. Transfer the strained water kefir to bottles or jars with airtight lids and refrigerate. This will slow down the fermentation process and help preserve the flavor.
- You can reuse the water kefir grains to make subsequent batches. Simply start again from step 1, using the strained grains from the previous batch.
Notes
- Start with good-quality water. Filtered water or non-chlorinated water is ideal. Chlorine can inhibit the growth of kefir grains and affect fermentation. Many water filters will dechlorinate your water.
- Use a ratio of approximately ¼ cup of sugar per quart (1 liter) of water. You can adjust the sweetness by slightly reducing or increasing the sugar amount.
- Dissolve the sugar completely in warm water before adding it to the fermentation vessel. This helps avoid undissolved sugar settling at the bottom and potentially causing issues.
- Water kefir ferments best at room temperature, ideally between 68-78°F (20-26°C). Fermentation time can vary depending on the temperature and the strength of the kefir grains. Generally, a fermentation period of 24–48 hours is sufficient. Longer fermentation may result in a stronger flavor.
- Keep the fermentation vessel away from direct sunlight and in a well-ventilated area. Sunlight can heat the liquid and affect fermentation. Avoid placing the container near strong odors, as kefir can absorb them.
- After adding the sugar water to the kefir grains, cover the container with a breathable cloth or coffee filter and secure it with a rubber band. This allows for gas exchange while keeping out contaminants. You can also use a fermenting jar with an air-release vent.
- You can add flavorings during the second fermentation. This can be done by adding fruits, fruit juices, herbs, or spices to the fermented kefir. Seal the container tightly and let it sit at room temperature for an additional 24-48 hours. This helps build carbonation and develop flavor.
- After fermentation, strain the kefir using a plastic or nylon mesh sieve. Separate the kefir grains from the liquid, and rinse them with non-chlorinated water. Store them in a sugar water solution in the refrigerator until your next batch. The finished water kefir can be stored in the refrigerator in a sealed bottle for up to a week.
- The kefir grains may take a few batches to adapt to their new environment. Be patient and give them time to establish a healthy culture.
- Use fresh or even organic ingredients for a better taste. We recommend organic water kefir grains.
