- Rice โ we have tried organic and non-organic. Organic rice grains are all black-deep purple, compared to non-organic rice grains with very pale grains. The brand we use is organico, it has a gold standard award.
- Sugar โ use coconut sugar because it maintains the nutty flavor that this pudding deserves.
- Milk โ use a thick, creamy milk.
- Water โ black rice absorbs a lot of liquid, so hot water should be on standby to prevent the pudding from becoming too thick and sticky when itโs cooking.
- Cinnamon โ adds a touch of spice, which we love. We use Ceylon cinnamon in all our baking, as its flavor differs significantly from regular cinnamon in supermarkets. For extra depth of flavor, organic Ceylon cinnamon sticks are a great alternative to powder.
- Cocoa Powder โ comes in natural and Dutch versions. Any unsweetened will work! The quality of the cocoa makes all the difference; the brands we like are Green & Blacks and Callebaut.
- Cloves โ optional but worth adding because they add an intensely deep, sweet aroma and flavor to the pudding. Use whole cloves, not the ground variety.

- 250 grams Organic Black Rice
- 1 tbsp Ground Ceylon Cinnamon
- 1.5 liter Full Fat Whole Milk - or dairy-free
- 100 grams Coconut Sugar - or sugar-sub
- 30 grams Cocoa Powder
- 3 Whole Cloves
- 2 Cinnamon Sticks - optional
Instructions
- Soak the black rice in water overnight. The water must cover the black rice at least 2-3 inches.
- In the morning rinse the rice.
- Put all the ingredients in the slow cooker. Add the milk, dairy milk, sugar, cocoa powder, cloves, and cinnamon. Donโt be alarmed by how much liquid there is, during cooking the rice will absorb it.
- After about six hours or so, depending on how quickly your slow cooker cooks, add more milk and stir to your preferred consistency.
Note: If possible, check the pudding for thickness at least 2-3 times. If it’s too thick and glutenous-looking, add more milk or hot water to bring it to a slightly thick but not thin consistency. - Turn the slow cooker off and allow the pudding to cool slightly for about 5-10 minutes before removing and discarding the cinnamon sticks if youโve used them.
Note: The Black Rice Pudding thickens as it cools. - Eat warm or cold, and top with your favorite toppings.

Notes
- If you’re concerned about your cholesterol levels, obesity, diabetes, constipation, diarrhea, bloating, or IBS, eating black rice may positively impact your health.
- The outermost layer of the grain, the bran, and the hull all contain the antioxidant anthocyanin, which is more abundant in black rice than in any other grain. This phytonutrient helps cleanse the body of toxins and diseases.
- It’s crucial to soak the black rice in water overnight; otherwise, it will take forever to cook. In the morning, you can add everything to the slow cooker.
- The texture of the black rice pudding can be adjusted to your liking. Depending on your preference, the pudding can be thick, stodgy, or slightly runny. You can add more or less milk accordingly.
- We have found that organic black rice is a better choice because it usually contains all black grains, compared to non-organic rice, which contains many white or very pale purple strays.
