Instructions
- Add the oil to the frying pan, and heat slightly.
- Slice chorizo and cook until they are browned and have released their oil, about 5-7 minutes. Remove the chorizo and set aside, leaving the oil in the dish.
- In a separate frying pan heat some oil and add the sausages. Cook for approximately 10 minutes on medium heat or until fully cooked to your liking. When cooked, turn the heat off and cover with a pan lid.
Note: You can make the sauce while the sausages are cooking. - Chop the onions and add to the chorizo oil and sautรฉ for about 5 minutes, until softened.
- Chop or mince the garlic and cook for an additional minute until fragrant.
- Slice the bell peppers and cook for another 5 minutes until they start to soften.
- Pour in the white wine, beans, chopped tomatoes, paprika, oregano, and tomato puree. Bring to a simmer. Let it cook for about 2-3 minutes to reduce slightly.
- Return the chorizo, add the cooked sausages to the pan, and mix everything together.
- Reduce the heat to low, cover, and let the casserole simmer for about 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
