Prepare a super healthy dairy-free alternative creamy vanilla coconut yogurt. It's delicious, nutrient-rich, a good source of healthy fats, has the addition of live and active cultures, is quick and easy to make, and tastes creamier than any store variety.

Ingredients

Method

  1. Place the can of coconut in the fridge the night before upside down.
    400 ml Full Fat Coconut Cream Milk
  2. The next day sterilize your jars by rinsing them thoroughly with boiling water.
  3. Remove the can of coconut milk from the fridge.
  4. With the can upside down and with a can opener pierce two holes in the base opposite each other. This is where the liquid is stored.
  5. Turn the can the right way up and drain the coconut water in a cup. Put into the fridge to use for later or to add to smoothies.
  6. Keep the can the right way up to open it.
  7. Scoop the coconut cream out of the can and put it into a bowl.
  8. Open the probiotics, discard the capsules, then pour the probiotic powder into the coconut cream.

  9. Mix together with a plastic spoon, never metal.
  10. Cover with a muslin cloth and place in a warm area such as an airing cupboard for at least 24 hours…48 hours is better.
  11. Remove the cloth, add the vanilla extract, then place the lid on the jar, and store it in the fridge overnight to thicken further. After the first 24 hours, your vanilla coconut yogurt is ready to eat.
    1 tsp Vanilla Extract
  12. If you want the yogurt runnier, then now’s the time to add a little coconut water that was stored in the fridge a day or two ago.
  13. Serve and enjoy!

Notes

Here are some top tips to help you succeed in making a Vanilla Coconut Yogurt like a pro:
  1. To ensure good results, use high-quality ingredients, particularly probiotics; otherwise, your yogurt may not set.
  2. Should you prefer a runnier yogurt or drinking yogurt, you must add a little of the coconut water that was originally stored in the fridge. Add the water after fermentation.
  3. Once the yogurt has fermented, immediately store it in the fridge.
    The yogurt needs to be refrigerated at all times after fermentation.
  4. Coconut yogurt can sometimes separate, with the thicker coconut cream rising to the top. Before serving, stir well to combine all the creamy liquid parts.
  5. Before adding the vanilla extract, reserve at least ¼ of a cup for your next batch. If you prefer, you can also add one probiotic capsule.
