Spiced Tomato Soup with Goji's

Ingredients
  

  • 50 grams Red Lentils
  • 1 medium Red Onion
  • 3 Garlic Cloves
  • 50 grams Goji Berries
  • 1 400ml Canned Plum Tomatoes
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Cumin Seeds
  • 1/2 tsp Chili Powder
  • 600 grams Vegetable Stock

Equipment

  • Saucepan or soup maker
  • Stick Blender not necessary if you're using a soup maker
  • Silicone Spatula
  • Weighing Scales
  • Measuring Spoons
  • Mini Chopper not necessary if you're using a soup maker

Method
 

 Soup Maker
  1. Melt the oil and sizzle the cumin seeds in a saucepan for about one minute being careful not to burn them.
    1 tsp Cumin Seeds, 1 tbsp Extra Virgin Olive Oil
  2. Peel and roughly chop onions and garlic.
    1 medium Red Onion, 3 Garlic Cloves
  3. Add onions, garlic, and cumin to the soup maker or Thermomix.
  4. Add the rest of the ingredients to the soup maker or Thermomix.
    50 grams Red Lentils, 50 grams Goji Berries, 1 400ml Canned Plum Tomatoes, 1/2 tsp Chili Powder, 600 grams Vegetable Stock
  5. Cook for 25 minutes.
  6. Using the blend option on your soup maker or Thermomix, blend on high
  7. Serve and enjoy!
Stovetop
  1. Melt the oil and sizzle the cumin seeds in a saucepan for about one minute being careful not to burn them.

    3 Garlic Cloves, 1 medium Red Onion
  3. Add onions and garlic to the pan.
  4. Add the rest of the ingredients to the pan.
    50 grams Red Lentils, 50 grams Goji Berries, 1 400ml Canned Plum Tomatoes, 1/2 tsp Chili Powder, 600 grams Vegetable Stock
  5. Bring to a boil, then simmer for 25 minutes.
  6. Once cooked, it will need to cool down slightly.
  7. Thoroughly blend ingredients together.
  8. Serve and enjoy!
