Ingredients
  

Cake
  • 375 grams All-Purpose Flour
  • 190 grams Butter softened or room temperature
  • 225 grams Golden Caster Sugar
  • 2 tsp Baking Powder
  • 2 tsp Vanilla Extract
  • 4 large Eggs room temperature
  • 200 ml Sour Cream or full-fat milk with a squirt of lemon juice, room temperature
  • 750 grams Rhubarb fresh and cut into small pieces
Streusel
  • 225 grams All-Purpose Flour
  • 150 grams Light Brown Sugar
  • 150 grams Butter cold, cubed
  • 2 tsp Ground Ceylon Cinnamon

Method
 

Rhubarb
  1. Wash and peel the rhubarb, then chop into 1cm pieces.
Cake
  1. Preheat your oven to Gas 4, 180°C, 356°). Grease and line your cake pan.
  2. In a bowl, mix the flour and baking powder.
    375 grams All-Purpose Flour, 2 tsp Baking Powder
  3. In another large bowl, cream the softened butter, sugar, and vanilla extract together until light and fluffy.
    Note: Beat together for at least 3-5 minutes until the mixture is light and fluffy.
    190 grams Butter, 225 grams Golden Caster Sugar, 2 tsp Vanilla Extract
  4. Add the eggs, one at a time, beating well after each addition. If you find the mixer is curdling, add a spoonful of flour.

  5. Gradually add the flour mixture to the wet ingredients, alternating with the sour cream. Begin and end with the flour mixture.
    200 ml Sour Cream
  6. Fold in the rhubarb pieces gently until they are evenly distributed.
    750 grams Rhubarb
  7. Pour the batter into the prepared baking pan and spread it evenly.
Streusel
  1. In a bowl, mix together the flour, sugar, and cinnamon.
    225 grams All-Purpose Flour, 150 grams Light Brown Sugar, 150 grams Butter, 2 tsp Ground Ceylon Cinnamon
  2. Add the cold butter cubes and rub them into the flour mixture using your fingers until you get a crumbly texture.
  3. Sprinkle the streusel evenly over the cake batter.
Baking
  1. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean and the streusel topping is golden brown.
  2. Let the cake cool in the pan on a wire rack before slicing.
Serving
  1. Serve the cake warm or at room temperature. It can be served plain, with a dusting of powdered sugar, or alongside whipped cream or vanilla ice cream.
