Method

  1. Preheat your oven to Gas 5, 375°F, 190°C.
  2. Prepare the plums by chopping at least cm in thickness.
    1000 grams Plums
  3. In a mixing bowl, combine the chopped plums, plum jam, granulated sugar, vanilla extract, and a pinch of salt. Toss to coat the plums evenly. Set aside.
2 tbsp Golden Caster Sugar, 1 tsp Vanilla Extract, ½ tsp Himalayan Salt, 340 grams Plum Jam
  4. In another bowl, combine the flour, baking powder, rolled oats, sugar, spices, and salt. Add the cold cubed butter and use your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
150 grams All-Purpose Flour, 100 grams Coconut Sugar, 100 grams Rolled Oats, 100 grams Butter, 1 tsp Baking Powder, 1 tsp Ground Ceylon Cinnamon, ½ tsp Ground Allspice
  5. Using your fingers, a food processor, or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Divide the crumble mixture into about 1/2 and 1/2.
  7. Put one portion of the 1/2 into the greased baking dish and flatten with a clean spoon, flat-based cup, or glass.
  8. Add the plum mixture mixture to the baking dish.
  9. Sprinkle the other 1/2 portion of the crumble mixture evenly over the plum filling in the baking dish.
  10. If you're using slivered blanched almonds, now's the time to sprinkle some over the top of the crumble.
    60 grams Slivered Blanched Almonds
  11. Place the baking dish on a baking sheet to catch any potential drips, and bake in the preheated oven for about 35-45 minutes, or until the plums are tender and bubbling, and the crumble topping is golden brown.
  12. Remove from the oven and let it cool slightly before serving.
  13. Enjoy your homemade crumble!

Notes

Here are some top tips to help you succeed in making Plum Crisp Crumble like a pro:
  1. Use fresh, high-quality plums for the best flavor and texture.
  2. Try combining the plums with the apples; they're a perfect combination.
  3. The butter should be cold and cut into small cubes for a perfect crumble topping.
  4. Use your fingertips or a pastry cutter to work the butter into the dry ingredients until you achieve a crumbly texture. This allows the topping to become crisp and golden during baking.
  5. Be careful not to overmix the crumble topping. Stop mixing once the ingredients are combined, and the mixture resembles coarse crumbs.
  6. Overmixing can result in a dense and tough topping rather than a light and crumbly one.
  7. Adding nuts on top, like slivered almonds or chopped walnuts, can also add crunch and richness.
  8. Cinnamon, nutmeg, allspice, or even a touch of ginger can enhance the flavor of the filling and the crumble topping. Experiment with small amounts of spices to find your preferred balance.
  9. If you notice the crumble topping is browning too quickly, but the plum filling isn't fully cooked, cover the dish with aluminum foil for the remaining baking time.
  10. A baking sheet under the baking dish helps catch any drips that might bubble over during baking.
  11. Allow to cool for 5 minutes before serving.
  12. Apples are plentiful during the summer season, especially if you have your own apple trees. Try combining the plums with the apples; they're a perfect combination. Our Sweet Plum Apple Jam would be perfect for the filling with this crumble variation.
