  • 397 grams Sweetened Condensed Milk
  • 150 grams Butter
  • 120 grams All-Purpose Flour or 100g almond flour and 1 tsp guar gum
  • 70 grams Cocoa Powder
  • 1/2 tsp Baking Powder
  • 120 grams Dark Chocolate Chips
  • 150 grams Coconut Sugar
  • 1/2 tsp Peppermint Extract
  • 1 pinch Himalayan Salt
  • 50 grams Peppermint Candy Canes (Optional)

Method
 

  1. Preheat your oven to Gas 4, 350°F, 175°C. Grease your baking dish and line with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together butter, salt, sweetened condensed milk, sugar, and peppermint extract until smooth.

  3. Sift in flour, cocoa powder, baking powder, and salt. Stir with a spatula until combined.

  4. Gently fold in chocolate chips.

  5. Pour the brownie batter into the prepared baking dish, spreading it out evenly.
  6. Top with crushed Peppermint Candy Canes.

  7. Bake in the preheated oven for about 25–30 minutes, or until the edges are set, and the center is slightly gooey. The exact baking time may vary depending on your oven, so keep an eye on them after 20 minutes.
