Ingredients

Filling:
  • 300 grams Cod Fillet
  • 300 grams Haddock smoked or unsmoked
  • 250 grams Raw King Prawns without shells
  • 150 grams Salmon smoked or unsmoked
  • 300 grams Four Cheese Sauce
  • 300 grams Lemon Dill Sauce
  • 1 tsp Dijon Mustard or your favorite
  • 100 grams Frozen Peas
  • 50 ml White Wine optional (Sauvignon Blanc or Chardonnay)
Topping:
  • 1.2 kg King Edward Potatoes or frozen mash potato
  • 40 grams Butter
  • 6 tbsp Creme Fraiche
  • 80 grams Gruyere Cheese or your favorite
  • 1 tsp Himalayan Salt boiling potatoes
  • 1 pinch Salt and Pepper

Method

Preparation
  1. Preheat your oven to Gas 6, 200°C, 392°F.
  2. Grease the baking dish.
Potatoes
  1. Peel and chop potatoes into chunks. Add to a pan of water.
    1.2 kg King Edward Potatoes
  2. Boil the potatoes in salted water until tender.
    1 tsp Himalayan Salt
  3. Drain the potatoes and mash them with butter, creme fraiche, salt, and pepper until smooth. Set aside
    Note: If you're using frozen mashed potato, defrost thoroughly. Empty the contents into a bowl and fluff up using a fork.
    6 tbsp Creme Fraiche, 1 pinch Salt and Pepper, 40 grams Butter
Filling
  1. Skin the cod, salmon, and haddock and chop into chunks. Add to the baking dish.
    300 grams Cod Fillet, 300 grams Haddock, 150 grams Salmon
  2. Add the prawns and peas. Mix well.
    250 grams Raw King Prawns, 100 grams Frozen Peas
  3. Combine the cheese sauce, optional wine, lemon dill sauce, and mustard.
    300 grams Four Cheese Sauce, 300 grams Lemon Dill Sauce, 1 tsp Dijon Mustard, 50 ml White Wine
  4. Pour over the fish and mix well.
  5. Spoon the mashed potatoes over the fish mixture, spreading it evenly to cover the entire surface. Level it out using a fork.
  6. Sprinkle grated cheese over the mashed potatoes for a golden crust.
    80 grams Gruyere Cheese
  7. Place in the oven and cook for 35 minutes or until the top is golden brown and the filling is bubbly.
  8. Allow the fish pie to cool slightly before serving.
