No-Cook Cherry Base:
  • 1 can Pitted Black Cherries 400ml
  • 1 jar Morello Black Pitted Cherry Compote 400ml
  • 130 grams Black Cherry Jam
Sponge:
  • 200 grams Butter
  • 200 grams Golden Caster Sugar
  • 140 grams Almond Flour
  • 60 grams All-Purpose Flour
  • 3 Eggs
  • 1 tsp Baking Powder
  • 1 tsp Almond Extract
  • 40 grams Slivered Almonds
  • 1 pinch Himalayan Salt
Topping
  • 10 grams Powdered Sugar

Method
 

No-Cook Base
  1. In a mixing bowl, add the jam, can of drained cherries, and compote.
    1 can Pitted Black Cherries, 130 grams Black Cherry Jam, 1 jar Morello Black Pitted Cherry Compote
  2. Mix together gently without bursting the cherries.
  3. Grease the baking dish.
  4. Pour in the cherry mix and spread evenly.
Sponge
  1. Preheat your oven to Gas 4, 350°F, 175°C. Grease a baking dish or individual ramekins.
  2. In a mixing bowl cream together the butter and sugar until light and fluffy.
    200 grams Butter, 200 grams Golden Caster Sugar
  3. Add the eggs one at a time, beating well after each one.
    3 Eggs
  4. Add the flour, ground almonds, baking powder, salt, almond extract.
    140 grams Almond Flour, 60 grams All-Purpose Flour, 1 tsp Baking Powder, 1 tsp Almond Extract, 1 pinch Himalayan Salt
  5. Gently mix together with a hand mixer or food processor together.
  6. Pour the pudding batter over the cherry mix.
  7. Sprinkle slivered almonds over the top.
    40 grams Slivered Almonds
  8. Bake in the preheated oven for 45 minutes, or until the pudding is golden brown and a toothpick inserted into the center comes out clean.
  9. Sieve icing sugar over the top.
    10 grams Powdered Sugar
